Solomon Islands Style Rice

This is a classic accompaniment of rice and vegetables flavoured with soy sauce from the Solomon Islands. Typically it's served with barbecued, fried or baked fish. This recipe shows the influence of the European and Asian cuisines on the Solomon islands.

Ingredients:

1 green bell pepper, cut into strips
1/2 onion, cut into thin strips
1 spring onion, chopped
1/2 aubergine (eggplant), diced
1 tomato, diced
Soy sauce
Salt
200g rice, washed
500l of water
1 lime

Method:

Place a wok or deep frying pan over high heat. Add in a glug of oil and use to stir-fry the bell pepper, spring onion and onion for about 3 minutes.

Add in the aubergine and tomato and cook for 10 minutes.

Add in the washed rice and water then add soy sauce to taste (I add about 2 tbsp). Bring to a boil over high heat, reduce the heat to low then simmer for 20 minutes, or until the rice is just tender.

After this time, take off the heat, cover you pan with a cloth and add a lid. Set aside to steam for 15 minutes.

Fluff your rice with a fork, turn into a warmed serving dish and serve as an accompaniment.
