Sollaghan is a savoury oatmeal porridge that was traditionally served for breakfast either on Christmas day morning or for St Stephen's day (Boxing day). It's a simple dish of toasted oatmeal flavoured with butter that's cooked in broth or basic stock.

Ingredients:

6 cups oatmeal
3 tbsp butter
9 cups meat broth or light stock
salt and freshly-ground black pepper to taste
more hot broth or stock to thin

Method:

Scatter the oatmeal over a baking tray. Transfer to an oven pre-heated to 180C and bake, stirring occasionally, until crisp and reddish in colour.

Transfer the toasted oatmeal into a pot, season well with salt and black pepper then add the butter. Add the 9 cups of broth, stirring to combine. Place over medium-low heat and cook, stirring until the mixture thickens and comes together in lumps.

Add enough of the remaining stock or broth to thin the mixture so it can be spooned out on plates.

Serve.
