Soda bread is a classic of Irish cooking and this modern twist makes biscuits (cookies) from what is, essentially, a soda bread dough.

Ingredients:

250g plain flour
150g granulated sugar
1/2 tsp baking soda
120g butter
70g currants
60ml buttermilk
1 egg
1/2 tsp salt
1/2 tsp caraway seeds, crushed

Method:

Combine the flour, granulated sugar and baking soda together in a bowl before adding the butter. Rub this into the dry ingredients with your fingertips until the mixture resembles a coarse meal. Stir-in the currants then add the beaten egg and stir to combine.

Add the milk and mix with a fork to form a soft dough. Shape this into a ball and turn onto a floured surface. Knead lightly for about 6 minutes, or until smooth and elastic then roll the dough to about 7mm thick and cut into squares or triangles with a knife (about 5cm is a good size for these).

Carefully transfer to a well-buttered baking tray then place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 10 to 12 minutes or until a golden brown.

Allow to cool on the baking tray for 20 minutes then transfer to a wire rack to cool completely.
