Soba with Shiitake and Fucus

This is one of those rare recipes that features Fucus in a Japanese-inspired soup with soba noodles.

Ingredients:

10 dried shiitake mushrooms
120g dried Fucus (bladderwrack)
1.5l water
1 tsp garlic oil
200g soba (buckwheat) noodles
1 tbsp soy sauce (or tamari)
shredded spring onions, to garnish

Method:

Place the shiitake mushrooms and dried bladderwrack in separate bowls then add just enough hot water to cover and set aside to re-constitute for 30 minutes. After this time drain the mushrooms and seaweed (retain the soaking liquid). Shred the seaweed then remove the tough stems from the mushrooms and shred the caps.

Add the 1.5l water to a pan and bring to a boil then add the seaweed and mushrooms along with the garlic oil, reserved soaking liquid (make sure you avoid adding any of the grit) then add the noodles. Continue cooking, uncovered, at high heat until the seaweed is completely soft (about 30 minutes).

Take off the heat then stir in the soy sauce, ladle into soup bowls, garnish with the shredded spring onions and serve.
