Soba (Buckwheat Noodle Soup) is a traditional Japanese recipe for a classic soup of soba (buckwheat) noodles with spinach, naruto, mushrooms and spring onion served in a dashi soup base. This soup is a Japanese staple, and though it can be served as a starter, it is far more commonly served as the main mid-day meal.
Ingredients:
2 rolls of soba (buckwheat) noodles
8 pieces of sliced narutomaki (Japanese fishcakes) (or substitute sliced crab sticks)
1 spring onion, cut at a bias (on the diagonal)
1 bunch of spinach, blanched, squeezed dry and cut into 5cm lengths
1 box of buna shimeji mushrooms, lightly boiled for a few minutes, drained and set aside.
Begin by preparing the dashi according to the recipe. Bring a large pan of water to a boil, add the soba noodles and cook for the amount of time suggested on the packaging (about 8 minutes). Drain and rinse under cold water then set aside.
Divide the soba noodles between two bowls and top with the spinach, naruto, buna shimeji mushrooms. Ladle the dashi soup base over everything and serve immediately.
If you desire, you can add a few chilli flakes for a little extra kick.
