Snowball Cakes
Snowball Cakes is a traditional British recipe for a classic Christmas cake or biscuit (cooke) made from a baked butter, icing sugar, flour, lemon zest and nut dough that's rolled into balls, baked and covered with icing sugar (white for Christmas and orange for Halloween). These melt-in the mouth cakes have been made since the 1950s and were originally known as 'Mexican Wedding Cakes'. They are easy to make, great fun, and make an excellent gift for
Christmas (simply place in a large jar, decorate with a ribbon and give asa gift).
If you use orange icing sugar to coat then these also make an excellent Halloween treat.
Ingredients:
100g butter, softened
150g icing sugar
150g plain flour
25g walnuts, chopped
25g
almonds, chopped
pinch of salt
finely-grated zest of 1 lemon
Method:
Cream together the butter and half the icing sugar until pale and fluffy. Add the flour and stir to combine then work in the nuts, salt and lemon zest until thoroughly combined. As you work it, the mixture should come together as a ball.
Tear off pieces and roll these into walnut-sized balls. Arrange on a lightly-greased baking tray then transfer to an oven pre-heated to 180°C and bake for about 12 minutes, or until cooked through but not coloured.
Remove from the oven and turn into a bowl containing the remaining icing sugar (use orange icing sugar for Halloween) and toss to coat. Set aside to cool then store in an air-tight jar. They will keep for up to a week.
