Smoked Sausage and Bean Casserole is a modern British recipe for a classic stew of smoked sausage, carrots and baked beans in a tomato and basil sauce that makes and excellent dish for Bonfire night. Ingredients:
1 smoked sausage, sliced
2 carrots, peeled and diced
450g tomato and basil sauce
420g baked beans
300ml water
oil for frying
Method:
Heat a little oil in a large pan and use to fry the carrots for 5 minutes. Stir in the tomato sauce and water then bring to a boil, cover and simmer for 15 minutes.
Now add the sausage and baked beans and cook for a further 10 minutes, or until the carrots are tender. Serve hot with mashed or baked potatoes.
