This is a simplified version of the clarified butter product variously known as Smen or Samn throughout North Africa and the Arabic world.

Ingredients:

450g unsalted butter, diced
1 tbsp coarse sea salt
1/2 tsp Herbes de Provence

Method:

Add the butter to a heavy-bottomed pan and heat gently until melted then bring to a boil. As soon as the fat is boiling reduce to a simmer then cook for 4 minutes or until the butter is clear and all the milk solids have settled to the base of the pan.

Wash a piece of muslin in hot water then ring out and use to line a sieve. Sprinkle the salt and herbs over the cloth then gradually spoon the clarified butter into the cloth and allow to drain through.

After the first straining wash the cloth then strain the liquid through once more. Transfer to a clean, dry, jar and seal. This will keep in the refrigerator for up to 6 weeks.
