Sladký Lokše (Sweet Slovak Potato Pancakes)

Sladký Lokše (Sweet Slovak Potato Pancakes) is a traditional Slovak recipe for a classic sweet pancake made from a potato, flour and egg dough sweetened with vanilla sugar that is fried and served with apple mouse and soured cream. Ingredients:

1kg floury potatoes
300g plain flour
1 egg
pinch of salt
2 tsp vanilla sugar
oil for frying
poppy seeds (for dusting)
apple mousse and soured cream, to serve

Method:

Scrub the potatoes clean, place in a pan of lightly-salted water and boil for about 30 minutes, or until tender. Drain then set aside to cool until they can be handled. Peel the potatoes and mash until smooth then work in the flour and egg. Add a pinch of salt and the vanilla sugar

Form into a ball then turn out onto a floured work surface. Roll the dough out as thinly as you can then cut into rounds (use a plate as a template).

Heat oil in a frying pan, add a pancake and fry on both sides until golden brown. Serve hot accompanied by the apple mousse and soured cream.

These are often dusted or encrusted with poppy seeds before serving, as in the image.
