Tannia and Pineapple Fritters

Method:

In a bowl, mix together the tannia, pineapple, bell peppers and onions. Add flour a little at a time; just enough to make it sticky. Add a little coconut milk just to make it creamy. Season with salt and black pepper, mixing thoroughly.

Heat oil in a large frying pan or cast iron skillet. Drop 2 tbsp at a time in the an and fry until golden brown about 2-3 minutes then flip over and fry on the other side about another minute.
