Sweet potato pudding is a traditional dessert in Saint Kitts and Nevis. It’s sweet, spiced, and utterly delicious. It can be prepared both with and without the pie crust.
If using a pie crust, then prepare according to the recipe roll the crust out and use to line a 22cm pie dish, Line the dish with the pastry then pour in baking beans. Transfer to your oven and bake blind for 15 minutes. Remove from the oven and allow to cool before removing the baking beans.
Mix together the sweet potato, coconut milk, sugar, cinnamon, nutmeg, raisins and flour in a bowl. Pour into a greased pie tin (or over your prepared crust), transfer to the centre of your oven and bake for 45 minutes or until set.
Serve warm or cold with ice cream or cream as a dessert
