Simsim

In essence, this is a brittle made from a blend of melted sugar and sesame seeds (simsim). However, unlike European brittles the ratio of seeds to sugar is higher so this comes out more like a biscuit.
Ingredients:
180g sugar
200g sesame seeds (they can be lightly toasted, if prefered)
Method:
Add the sugar to a saucepan and heat over a gentle flame until all the sugar has dissolved. Bring to a boil and cook for 2 minutes, stirring constantly. Stir-in the sesame seeds and immediately the syrup into a well-greased 18cm square dish.
Cut into 12 squares whilst still warm then allow to cool and break the pieces apart when cold.
