Sibirskie Jeskimosy (Siberian Huskies) is a traditional Russian recipe (from Siberia) for a classic vegetarian dish of dumplings, kalduni, served in a cabbage and onion sauce flavoured with mustard and Worcestershire sauce. Ingredients:
1½ tbsp corn oil
1.1kg cabbage, sliced very thinly
2 large onions, thinly sliced
180ml chicken stock
2 tsp to 3 tsp Dijon mustard
3/4 tsp Worcestershire sauce
1/2 tsp fennel seeds
freshly-ground black pepper, to taste
1/2 tsp salt (optional)
40 kalduni, cooked and drained
2 tsp chives, chopped
Method:
Heat the oil in a large frying pan over high heat. Add the cabbage and onions and stir-fry for about 5 minutes, or until the mixture has wilted. Reduce the heat to medium-low and continue to fry, tossing occasionally, until the cabbage is very limp, almost velvety (about a further 20 minutes).
Add the stock, mustard, Worcestershire sauce and fennel then bring the mixture to a simmer and cook for 1 minute. Season to taste then add the kalduni and toss until the cabbage and dumplings are thoroughly combined. Fold in the chives, divide between four plates and serve.
