Shish Tawuq (Chicken Kebab with Bharat Spices) is a traditional Syrian recipe for a classic kebab of cubed chicken parinated in spices and vegetable oil that's cooked on a barbecue. Ingredients:
1kg skinless chicken breasts cut into cubes
120ml extra-virgin olive oil
3 tbsp freshly-squeezed lemon juice
1 onion, grated
1/2 tsp ground cinnamon
1/2 tsp ground green cardamom seeds
1 tsp fresh thyme leaves
salt and freshly-ground black pepper, to taste
1 tsp ground cumin
1 tsp bharat spice mix
1/2 tsp paparika
Method:
Whisk together the olive oil, lemon juice and spices in a bowl and season with salt and black pepper. Add the chicken and toss to combine. Cover and refrigerate to marinate for at least 6 hours. About an hour before you're ready to cook soak about 10 wooden skewers in a bowl of water.
Pre-heat your barbecue or pre-heat a grill (broiler). Thread the chicken pieces onto your skewers (so they just touch) then either barbecue or grill for about 12 minutes on each side, turning frequently and brushing with any remaining marinade until cooked through. Serve hot.
