Sheer Khurma

This is a traditional Muslim breakfast from Indonesia that's typically served on festive occasions. It is traditionally served on Eid day (both Eid Al-Fitr and Eid Al-Adha) to the household after they come back from Eid prayers. Often a large batch is made so that it can continue to be served throughout the day both to the household and to any guests who may come by.

Method:

Melt the butter in a large pan (a flame-proof casserole is good), add the vermicelli and fry until well browned (but take care not to burn them). Stir in 50g of sugar and continue cooking for 2 minutes, stirring constantly, then add the milk 100ml at a time, stirring constantly. When all the milk has been added bring the mixture to a boil then add the raisins, whole cardamom pods, half the chopped nuts and the remaining sugar. Reduce the heat to a rolling boil and continue cooking until the level of milk has reduced by half (the vermicelli should be very soft by this stage).

Quickly add the rose water, charoli (chironji) nuts and the fresh cream then reduce to a simmer and cook for 10 minutes. Garnish with the saffron threads, powdered cardamom and the remaining nuts then serve immediately.
