Shangi with Cottage Cheese

Ingredients:

1 batch basic yeast dough

For the Stuffing:
450g cottage cheese
1 egg
1 bunch of spring onions, chopped
salt and freshly-ground black pepper, to taste

melted butter, for brushing

Method:

Prepare the basic yeast dough according to the recipe. Whilst the dough is proving, prepare the stuffing. Mix all the ingredients together in a bowl, cover and chill in the refrigerator.

When the dough has risen, turn onto a floured surface then knock back. Tear off pieces of the dough then flatten into a rough circle. Place the stuffing in the centre of each dough round then fold the remainder of the round towards the centre (but leave some of the stuffing open). Transfer to a greased baking tray then bake at 175°C for about 15 minutes, or until golden brown.

Brush with melted butter and serve warm.
