Ginseng is supposed to be one of the ultimate aphrodisiacs and this breakfast muffin is supposed to do wonders for your sex life. This is the standard version with ginger, cinnamon and milk chocolate, but my wife won't look at it unless it has chillies and the family chilli sex muffins are given elsewhere on the site.
Combine the flour, baking powder, spice and ginseng in a large bowl. Meanwhile gently melt the chocolate and butter in a bain-marie (double boiler) or microwave until smooth. Add the melted chocolate to the dry ingredients then stir in the honey, milk and egg whites.
Stir just enough to blend then pour into greased or lined muffing tins and bake for about 25 minutes, or until well risen, cooked through and golden. Allow the muffins to cool for 5 minutes before removing from the pan. Serve warm.
