Sea Spaghetti and Carrot Salad

Sea spaghetti is a seaweed that is becoming a major industry in Ireland and to support this, modern Irish chefs are coming up with innovative way of using this wild vegetable. This raw food dish is a classic example of the genre.

Ingredients:

20g dried sea spaghetti
2 tbsp lemon juice
1 tbsp white wine vinegar
5 carrots, shaved into long strips with a potato peeler
4 tbsp fresh chives, chopped

For the Dressing:
3 tbsp extra-virgin olive oil
2 tbsp lemon juice
1 tsp whole-grain mustard
1 tsp runny honey
2 garlic cloves, crushed
pinch of cayenne pepper
freshly-ground black pepper, to taste

Method:

Rinse the sea spaghetti well then soak in a bowl of warm water for 1 hour, or until soft. Drain the seaweed and rinse once more then place in a bowl with the lemon juice and vinegar. Cover with clingfilm and set aside in the refrigerator to marinate over night.

The following day, reserve a few of the seaweed strands for use as a garnish then cut the remainder into 5cm lengths. In a bowl, whisk together all the ingredients for the dressing. Arrange the copped sea spaghetti and carrot shavings in a bowl. Pour over the dressing, toss to coat then set aside to marinate for at last 1 hour.

Arrange on serving plates, garnish with the reserved whole sea spaghetti strands and the chives and serve. As well as being used as a starter this dish can also be served as an accompaniment to a main meal.
