Grilled Red Snapper

Grilled fish should be a priority when tasting Caribbean dishes. As an island country, the flavour of grilled fish is unrivalled, juicy and full of flavours; prepared with garlic, ginger and chilli, the result is a very tasty dish. +soy sauce

Ingredients:

4 red snapper
6 garlic cloves, minced
1 thumb-sized piece of ginger, minced
1 hot chilli, minced
juice of 3 limes
3 tbsp soy sauce

Method:

Clean and scale the red snapper then trim the fins and remove the gills. Cut three deep slashes in the both sides of the fish.

In a bowl, mix together the garlic, ginger, chilli, lime juice and soy sauce. Spread this mixture over the insides and both sides of the fish. Sit in a non-reactive dish, cover and marinate for an hour.

In the meantime, pre-heat your barbecue. Once the barbecue is hot and the coals are covered with a dusting of white ash, grease your barbecue grill with oil.

Add the fish and cook for about 12 minutes per side, until the fish is cooked through and the skin is crisp and nicely coloured.

Serve hot.
