Yes, I know that woodlice are not insects; in fact they're crustaceans and most closely related to prawns (shrimp). If you think of them as land prawns, and that may help you overcome any resistance to eating them. As long as they're clean (ie free from detritus and eaten fresh the taste like mild prawns).
Ingredients:
50g woodlice
2 eggs
2 tbsp milk
2 spring onions, finely chopped
handful of mixed rocket and watercress, finely chopped
salt and freshly-ground black pepper, to taste
3 tbsp olive oil
Method:
Beat together the eggs and milk in a bowl, season lightly then set aside. Bring a pan of salted water to a boil. Add the woodlice and blanch for 2 minutes then drain.
Place a frying pan over medium heat. Once hot add the olive oil then stir in the spring onions and greens. Wilt for 1 minute to wilt then add the cooked woodlice and stir through.
Pour over the egg mixture and stir to combine. Cook, stirring, until the eggs start to solidify. Once they are almost set (the neat of the pan will finish their cooking).
Divide between two plates and serve with toast.
