This Scottish classic is also known as 'tattie scones' and are a staple of a 'traditional' Scottish breakfast.

Ingredients:

250g floury potatoes, peeled
50g self-raising flour
sea salt and freshly-ground black pepper, to taste

Method:

Bring a pan of lightly-salted water to a boil. Add the potatoes and boil until tender (about 20 minutes). Drain the potatoes then mash in a bowl until smooth.

Season to taste with salt and black pepper then gradually work in the self-raising flour. Knead the mixture until soft and no longer tacky then turn out onto a lightly-floured work surface and knead gently until smooth and elastic.

Dust the top with a little flour then roll out to about 5mm thick before cutting out into 7cm diameter rounds with a pastry cutter. Place a griddle pan over medium heat. When hot, brush each potato scone with a little olive oil and cook for about 2 minutes per side.

These can be made a little before hand and kept warm in the oven until it's time to serve.
