Scottish Pikelets

The term 'pikelet' is known throughout the British isles and can refer to different things (crumpets, teacakes and pancakes) in different regions. In Scotland it represents a thick pancake (whereas crumpets contain yeast).
Ingredients:
125g self-raising flour
50g sugar
1/4 tsp baking soda
1 egg, lightly beaten
180ml milk
1 tbsp butter
Method:
Sift the flour and baking soda into a large bowl then add the sugar and stir to combine thoroughly. Slowly add the eggs and milk, stirring all the while. Continue stirring vigourously until the batter is smooth.
Place a non-stick frying pan over medium heat. Lightly coat the surface with a little butter then pour 2 tbsp of the batter into the pan. Cook until the bubbles begin to appear on the surface of the batter then flip and continue cooking on the other side until lightly browned (about 2 minutes per side should suffice). Transfer to a on oven to keep warm and continue cooking until all the batter is cooked.
Re-apply butter to the pan between each batch.
