Scottish Parkin

Ingredients:

240g plain flour
120g butter
240g medium oatmeal
120g caster sugar
180g golden syrup
180g black treacle
2 tsp baking powder
2 tsp ground ginger
1 egg, lightly beaten
4 tbsp milk
blanched almonds

Method:

Sift together the flour, baking powder and ginger into a bowl. Cut the butter into small cubes, add to the bowl and rub into the flour until the mixture resembles fine breadcrumbs.

Add the syrup, treacle and milk to a saucepan and heat gently until the mixture becomes fluid. Take off the heat, form a well in the middle of the flour and tip in the syrup mix. Stir to combine then add the egg and mix thoroughly.

Turn the resultant batter into a lined and greased 25cm square tin. Arrange the blanched almonds on top then transfer to an oven pre-heated to 180°C and bake for about 50 minutes, or until the top of the cake is golden and a skewer inserted into the centre emerges cleanly.

Allow to cool for 10 minutes in the tin then transfer to a wire rack and allow to cool completely. When cold cut into squares and serve.
