Scotch Stew

Ingredients:

3 tbsp pearl barley
1/2 small cabbage, shredded
1/2 head of celery, cut into large pieces
3 onions, cut into large pieces
2 carrots, scraped and cut into large pieces
1 turnip (swede), peeled and cut into large pieces
(any other vegetables, in season)
salt and freshly-ground black pepper, to taste

Method:

Bring a pan of water to a boil, add the pearl barley and blanch for 1 minute then drain. Transfer the barley to a pan, cover with fresh water and simmer gently for 30 minutes.

Turn the mixture into a large pan, add all the vegetables (except the cabbage) then add just enough additional boiling water to barely cover the ingredients. Adjust the seasonings to taste then bring to a boil and cook gently until the vegetables are almost done. Add the cabbage and cook for a further 10 minutes, or until the cabbage is tender.

Serve hot.
