Sausages with Barbecue Sauce: Classic British recipe for a dish of barbecued sausages served with a tomato-based dipping sauce.

Ingredients:

2 tbsp sunflower oil
1 large onion, chopped
2 garlic cloves, chopped
225g tinned, chopped, tomatoes
1 tbsp Worcestershire sauce
2 tbsp Chinese Brown Sauce
2 tbsp light muscovado sugar
4 tbsp white wine vinegar
1/2 tsp mild chilli powder
1/4 tsp mustard powder
dash of Tabasco sauce
500g sausages
salt and freshly-ground black pepper, to taste
bread finger rolls, to serve


Method:

Heat the oil in a small saucepan and fry the onion and garlic for about 5 minutes, until soft and just beginning to brown around the edges. Add the tomatoes, Worcestershire sauce, brown sauce, sugar, white wine vinegar, chilli powder, mustard powder and Tabasco sauce to the saucepan.

Bring the mixture to a boil, reduce to a simmer and cook gently for about 12 minutes, or until the sauce begins to thicken slightly. Set aside to keep warm until needed.

In the meantime, cook the sausages on a barbecue over hot coals for between 10 and 15 minutes, turning frequently (do not prick them with a fork, or the fat will fun out and cause the barbecue to flare).

To serve, insert the sausages into the bread rolls and serve with the barbecue sauce.
