Sausage, Apple and Cranberry Stuffing

Sausage, Apple and Cranberry Stuffing is a traditional American recipe for a classic stuffing or dressing of turkey sausage, bread, celery, apple, herbs and cranberries moistened with turkey stock that is used for stuffing the Christmas or Thanksgiving turkey. Ingredients:

150g whole wheat Breads, crusts removed and cubed
250g white bread, crusts removed and cubed
450g turkey sausage (casings removed)
100g onions, chopped
75g celery, chopped
2 1/2 tsp dried sage, crumbled
1 1/2 tsp dried rosemary
1/2 tsp dried thyme
1 cooking apple, cored and chopped (no need to peel)
90g dried cranberries
35g fresh parsley, minced
1 turkey liver, boiled to cook and finely chopped
180ml turkey stock
4 tbsp butter, melted

Method:

Spread the Breads cubes in a single layer on a large baking tray. Transfer to an oven pre-heated to 175°C and bake for 6 minutes, or until the bread is evenly toasted. Turn the toasted bread pieces into a large bowl and set aside.

Place a large frying pan or skillet over medium heat, add the turkey sausage meat and onion and fry, stirring to break up the lumps, until the mixture is evenly browned (about 6 minutes). Stir in the celery, sage, rosemary and thyme at this point, stirring for two minutes to blend the ingredients and meld the flavours.

Take off the heat and pour this sausage mix over the bread. Now stir in the apples, cranberries, parsley and the turkey liver. Drizzle the turkey stock and melted butter over the top then turn to mix lightly.

Spoon this mixture into the neck and body cavities of the turkey then roast as usual.
