Sattoo (Sattu in the original Hindi) is an Indian porridge made from a mix of coarse flours (typically red lentil flour and chickpea amongst others) and originates in the Bihar province of Inda. Typically it's made cold and is said to have a cooling effect in hot summers. Recipes for this are very variable and can be made into both sweet and savoury versions. This version, though based on a sweet sattu is considerably altered and adulterated based on the original Sweet Sattu but I hope it retains some of the spirit of the original (a mix of toasted grain, sugar, nuts and fruit, for example). This version is, however, far more palatable to European tastes.

Ingredients:

90g yellow cornmeal
90g barley flour
90g millet flour
120ml grapeseed oil (or corn oil)
750ml water
2 tbsp honey or maple syrup
40g raisins or currants
40g chopped nuts
40g wild fruit (mulberries are lovely but blackcurrants, blackberries, raspberries or just about any fruit also work)
40g ripe gooseberries, topped and tailed
40g dried apricots or prunes, sliced
40g sliced plums (apples also work)

Method:

Add the oil to a pan and use to gently fry for 10 minutes over low heat, stirring constantly. Slowly incorporate the water and honey into the mix of grains and once fully incorporated slowly raise the heat and bring the pot to a boil. Reduce the heat to a gentle simmer, cover and cook for 20 minutes, stirring frequently.

Pour the porridge into an oiled pie or baking dish, allow to cool then chill in the fridge. Top the porridge with the mixed fruit and nuts, cut into wedges and serve.
