This flavourful chicken stew is made with aji amarillo (yellow chilli), peanuts, and a mix of spices. It’s served with rice and potatoes for a complete meal. The tunta called for in this recipe are chuño (dried potatoes) that are washed for about a week to whiten them before being sun dried.
For the Salsa:
2 onions
1 tomato
250ml oil
1 tsp salt
Method:
Place a large pan over medium heat. Add a drizzle of oil and use to fry the onion and garlic for about 8 minutes, or until the onion is golden. At this point add the peas, pepper, salt, and cumin.
Separately, cook the chopped chicken in water with some onion and Aji Amarillo, and when tender (about 40 minutes), remove from heat. Cook the peeled tunta, cut into small pieces in a pan of water. In another separate pan of lightly-salted water boil the potatoes for about 25 minutes, until tender.
Strain the potatoes, mix with the cheese and egg, and stir over low heat until the cheese eggs set.
For the Salsa: Chop the onion and dice the tomato, mix, and season with oil and salt.
Serve the chicken with boiled potatoes and tunta mixture. Arrange the salsa on top of the chicken.
