Sagu Keju (Indonesian Cheese Biscuits) is a traditional Indonesian recipe for a classic biscuit (cookie) made with a blend of sago, cornflour and wheat flours bound with egg, butter and margarine that's lightly sweetened and flavoured with cheese. Ingredients:

125g margarine
100g butter
125g powdered sugar
3 egg yolks
100g old Edam cheese, grated (the cheese has to be old so you can grate easily)
50g mature Cheddar cheese, grated
300g sago flour (or arrowroot)
50g cornflour
50g plain flour

Method:

For the cheese it's best to grate and leave in the open over night to dry out.

Cream together the butter, margarine and sugar until pale and fluffy. Add the egg yolks, one at a time, beating thoroughly to combine after each addition. Add the cheese to the creamed mixture and beat to combine. Now add the flours and mix in to combine thoroughly.

Spoon the resultant dough into a piping bag fitted with a broad star nozzle. Form rings on a greased baking tray then transfer to an oven pre-heated to 180°C and bake for about 12 minutes, or until golden, but not completely dry. Allow to cool before serving.
