Involtini Aka di Salvia (Sage and Anchovy Fritters)

Check the anchovies for saltiness and soak in water if they are too salty.
Once the anchovies are ready sandwich each fillet between two sage leaves and secure with a cocktail stick. Prepare a deep fat fryer by heating to 180°C (350°F/Gas Mark 4) then dip the involtini first in egg then in the flour.
Drop in the hot oil and fry until puffed-up and crisp. Serve immediately.
