Rum Balls

Ingredients:

240g walnuts, finely ground
240g milk chocolate, finely grated
200g sugar
3 egg whites, lightly beaten
150g grated chocolate or small chocolate shavings (or chocolate sprinkles)
1 tbsp dark rum (about)

Method:

Combine the walnuts, chocolate and sugar with half the egg whites in a bowl. Add just enough rum to moisten the mixture and to enable it to hold together as a a soft dough.

Tear off pieces of the mixture and shape into balls about 3cm (or a little less) in diameter. Roll the balls in the remaining egg white and then in the chocolate shavings. Transfer to a piece of greaseproof (waxed) paper and allow to dry.

Store in an air-tight tin lined with waxed paper. Typically they will keep for about 2 weeks.
