The rosebay willowherb (also known as fireweed) is a very handsome plant with impressive infloresences. All parts of the plant are edible (except the seeds) and this recipe makes great use of the flowers to form a jelly (clear jam).

Ingredients:

2l rosebay willowherb blossoms (remove all stems)
60ml lemon juice
1.1l water
2 packets powdered pectin
850g sugar

Method


Pick over and wash the rosebay willowherb flowers and add to a large pot. Add 60ml lemon juice and all the water. Bring to a boil and allow to cook for 10 minutes. Allow to cool then strain into a cool pan. Add the pectin, bring to a boil then add the sugar.

Return the mixture to a boil then boil hard for 1 minute. Take off the heat, allow to cool a little then pour into cleaned, sterilized jars that have been warmed in an oven set to 80°C. Top with a circle of wax paper, seal securely then allow to cool before storing.
