Many of our garden pelargoniums originated in South Africa, so it's hardly surprising that they use the fragrant leaves of some cultivars of these plants to lend an aromatic note to sugar. This gives a rose geranium scented sugar (similar to vanilla sugar) that can be substituted for vanilla sugar in any recipe calling for that. Or you can just mix some of the rose geranium sugar with normal sugar in any recipe for custard, biscuits, cakes and sponge puddings.

Method:

You will need a glass jar or other canister with a sealable lid. To make, simply fill the container with alternating layers of rose-scented geranium leaves and sugar. Seal the jar securely then set aside in a warm place for about a week so that the scent of the leaves can be absorbed by the sugar.

Sift the sugar before use.
