Rooibos Krummelpap (Rooibos Crumbly Maize Meal) is a traditional South Africa recipe (for a classic crumbly maize meal accompaniment cooked in water that's traditionally served with braais (barbecues). This is a crumbly form of cooked maize meal that is often served as an accompaniment at traditional South African braais (barbecues).
Ingredients:
750ml water
5 redbush (rooibos) tea bags
2 tsp salt
600g mealie meal (white maize meal)
Method:
Combine the water and redbush tea bags to a large, heavy-based saucepan and bring to a boil. Take off the heat, set aside and allow to infuse for 15 minutes.
At this point remove the teabags, then place the tea back on the heat and bring to a boil. Add the salt and whisk to dissolve. Now add the mealie meal without stirring so that the maize meal piles up in the centre of the pan.
Cover the pan and simmer gently for 15 minutes. Remove the lid, stir the mixture with a fork until it crumbles then cover and simmer gently again for 25 minutes, or until the maize porridge is crumbly.
