Rock Candy

I'm not sure if this is a recipe or a chemistry experiment! But it's interesting watching crystals of pure sugar as they grow and if you have the patience to make lots they really do look great served in a bowl.

Ingredients:

720g sugar
480ml water

Method:

Bring the water to a boil in a medium saucepan hen add the sugar and allow to dissolve as you stir continually with a wooden spoon. Continue stirring until the solution grows clear and reaches a rolling boil.

Remove from the heat and carefully pour into a jar before covering with a small piece of waxed paper. Take a piece of cotton string and hang a weight on one end (a screw or washer or something similar) then tie the other end to a pencil, chopstick or dowel. Adjust the length of the string so it's about 2/3 the height of the jar then suspend it in the jar of sugar solution.

Almost immediately take the string out and lay it on a piece of waxed paper. Make sure it's straight and leave for a few days to dry completely.

Once dry gently suspend the string back in the sugar solution and let it sit, undisturbed, at room temperature for several days. As the days pass you will see crystals begin to grow on the string. Whatever you do don't touch the jar. It will typically take seven or eight days for the crystals of sugar to grow completely.

What you've done is to grow large crystals of pure sugar. You can harvest these off the string and store them or grow more, if you wish.
