Here is a really fantastic little nibble for a New Year's eve party, if you are looking for something a little different.

Roasted Chickpeas: A American recipe for a party snack of cooked chickpeas coated in spiced oil that are baked until crunchy before serving.

Ingredients:

2 x 400g tins of chickpeas
1 tbsp, heaped, cajun seasoning
1 tsp garlic powder
1 tsp onion powder
cayenne pepper, for dusting

Method:

Drain the chickpeas in a strainer and rinse thoroughly with cold water. Shake to help remove any water adhering to the beans then set aside.

Line a rimmed baking tray with foil and grease with oil. Scatter the beans over the baking tray then sprinkle over the Cajun seasoning, garlic powder and onion powder.

Shake the baking tray to distribute the seasonings over the beans then transfer to an oven pre-heated to 170°C and bake for about 45 minutes, shaking every 15 minutes or so, to ensure that the beans do not burn.

Cook until the beans are nicely browned and crispy then remove from the oven and turn into a plastic bowl with a tight-fitting lid.

Store in the bowl until needed.
