Method:

Use a boning knife to carefully remove the bone from the goat leg. Place in a large bag and pour in the lime juice and red wine. Set aside to marinate for 2 hours at room temperature, turning frequently during that time.

When done, drain the meat (reserve the liquid) then sprinkle liberally on both sides with the seasonings. Fold he meat over in half then wrap in foil (add the reserved marinade) form into a tight parcel then place on a roasting pan. Transfer to an oven pre-heated to 160°C and bake for 60 minutes. Turn the oven down to 110°C then punch a few holes in the foil to allow the steam to escape. Continue cooking for 4 hours then remove from the oven, carve and serve.
