Rich Irish Sodabread

This is a version of the classic Irish sodabread that is much richer than the norm. It is excellent with soups and can be used as the base for canapés.

Ingredients:

100g wholemeal flour
100g self-raising flour
1 tsp bicarbonate of soda
60g large oat flakes
30g wheatgerm
30g wheat bran
2 tsp salt
5 tbsp runny honey
1 1/2 tbsp black treacle (molasses)
225ml buttermilk

Method:

Combine all the ingredients for the sodabread in a bowl. Using your hands, mix the ingredients until they come together to form a soft dough.

Wash, dry and flour your hands then divide the dough into two equal portions before shaping these into tow ovals. Arrange on a floured baking tray then transfer to an oven pre-heated to 150°C and bake for 45 minutes, or until both loaves are well risen, golden brown and sound hollow when rapped on the base.

Remove from the oven and set aside on a wire rack to cool. Serve warm.
