Reform Cake with Almonds is a traditional Serbian recipe for a classic egg white-based ground almond torte sliced into three rounds and sandwiched with chocolate buttercream that's decorated with chopped almonds. Begin with the cake. Add the egg whites to a clean and dry bowl and whisk until stiff. Scatter the sugar over the top and whisk again until completely incorporated into the mixture then fold-in the ground almonds. Divide the dough equally between four round cake tins then place in an oven pre-heated to 180°C and bake for about 15 minutes or until set and golden (you may well need to do this in batches). Once the cakes are done transfer to wire racks and allow to cool.
Meanwhile, prepare the filling. Combine the egg yolks and sugar in a bain-marie. Continue cooking, stirring constantly, until the mixture thickens then add 250g butter and 400g chocolate. Mix well until the chocolate melts and the mixture becomes foamy.
When the cakes have cooled cover three pieces with the filling and stack the cakes then cover the top and sides with the chocolate mixture before covering the entire cake with the chopped almonds.
