Red Wine Sauce

Ingredients:

2 tbsp olive oil
1 garlic clove, thinly sliced
200ml red wine
2 tbsp tomato purée
375ml vegetable stock, hot
1 tbsp soft brown sugar

Method:

Heat the olive oil in a pan, add the garlic and fry until begins to brown. Remove the garlic with a slotted spoon and discard. Add the red wine to the pan and bring to the boil.

In the meantime, whisk together the hot vegetable stock, tomato purée and sugar. Stir this into the pan and bring back to a boil. Reduce to a simmer and cook for about 10 minutes, or until the sauce has reduced and thickened.

Serve hot.
