Ingredients:
1.2kg sugar
500ml light corn syrup
1 tbsp cinnamon oil
240ml water
a few drops of red food colouring
Method:
Combine all the ingredients (except the food colouring) in a pan and bring to a boil. Continue boiling until the mixture reaches 150°C as measured on a confectioner's thermometer (this is the hard crack as determined by a cold water test for candy).
Take off the heat and stir-in the red food colouring. Grease a baking tin and pour the candy mixture into it. Level the top with a buttered spatula then score with an oiled knife. Set aside to cook completely then break into pieces and store in a sealed jar.
