Rasmalai: a classic Indian dessert of milk powder and egg balls cooked in spiced milk that is often served for Diwali.
Ingredients:
1l milk
150g sugar (or to taste)
1 tbsp sliced cashew nuts and almonds (badam)
150g milk powder
1 tsp baking powder
1 egg
1/2 tsp ground cardamom
Method:
Sift together the milk powder and baking powder into a bowl then add the egg and mix the ingredients together to form a dough. Shape this into 18 balls.
Combine the milk, sugar and sliced nuts in a large, heavy-based pan. Bring to a boil then gently lower in the milk powder balls. Cook over medium heat for about 20 minutes, or until the milk balls have doubled in size and cooked through.
Scatter over the ground cardamom and mix very gently to combine. Take off the heat and serve either warm or chilled.
