Rainbow Mallow Eggs

To make these you will need a mini egg mould (available from good cookery stores).

Ingredients:

2 envelopes unflavoured gelatine (14g powdered gelatine)
3 tbsp coloured sugars (one each of yellow, pink and violet)
300ml water, divided
400g granulated sugar
1 tsp Vanilla Extract

Method:

Lightly grease the mini egg pan then use the coloured sugars to decorate the egg-shaped cavities with your desired colour mix and pattern then invert the pan and shake out the excess.

Place 150ml water in a small bowl, add the gelatine then stir to mix and set aside to stand for 5 minutes. Now combine the sugar with 150ml water in a saucepan cook over low heat, stirring frequently, until all the sugar has dissolved and the liquid is clear. Take off the heat and set aside to cool for 15 minutes.

Combine the gelatine and sugar water in the bowl of an electric mixer. Add the vanilla extract then beat at the mixer's highest setting for about 10 minutes, or until the mixture is light and fluffy and any ribbons that drop from the beater hold their shape on the surface of the mixture.

Pour the mix into the prepared moulds and level the sides. Sprinkle a little coloured sugar on the marshmallows then refrigerate over night to set. The following day, turn out of the pan onto a serving plate. If desired, garnish with a little coconut tinted green. The mixture should be enough for about 18 mini eggs.
