Quizaca (Cassava Leaf Stew)

Quizaca is the Angolan name for the cassava leaf and this is the Angolan version of that stew which is found throughout West and Central Africa.

Ingredients:

500g cassava leaves, shredded (or substitute spinach or collard greens)
500g peeled prawns
2 large onions, finely chopped
4 garlic cloves, finely chopped
2 tbsp olive oil
4 tbsp peanut butter
salt, to taste

Method:

Wash the cassava leaves thoroughly. Place in a pot, cover with water, bring to a boil and drain immediately.

Heat the oil in a pan, add the onions and the garlic and fry for about 4 minutes or until softened. In a separate pan fry the prawns until just coloured then turn onto a chopping board and cut into pieces.

Add the prawns to the onion mixture then dilute the peanut butter in 250ml hot water and stir into the pan. Season with salt then add the cassava leaves. Cook for about 40 minutes, or until the greens are very tender.

Serve hot to accompany meat or fish.
