This is a delicious, but very easy to make berry cheesecake that can be made in a flash. Excellent for the harassed host.

Ingredients:

150g mixed berries (blackberries, blueberries, strawberries, raspberries, redcurrants etc)
1 tbsp golden caster sugar
juice of 1 lemon
finely-grated zest of 1 lemon
4 ginger biscuits
1 tbsp butter
2 tbsp icing sugar
125g Mascarpone cheese (or use this site's recipe for home-made mascarpone)

Method:

Combine the berries in a pan with the caster sugar and 1 tbsp of the lemon juice. Heat gently, stirring to combine then bring to a gentle simmer and cook for about 4 minutes, or until the berries have just broken down. Take off the heat and set aside to cool.

Place the ginger biscuits into a sturdy plastic bag and pound with a mallet or a rolling pin to crush. Melt the butter in a small saucepan then mix in the crushed biscuits to combine. Spoon the resultant mixture into the base of two large serving glasses and tamp down slightly.

Beat the mascarpone cheese in a bowl until soft then fold in the lemon zest, icing sugar and the remaining lemon juice. Divide the Mascarpone mixture between the two glasses, spoon over the berry mixture and serve immediately.
