Qamar-el-Deen (Apricot Leather Drink) is a traditional Egyptian recipe for a classic sweet and fruity drink made from apricot leather that, traditionally, is served to end the Ramadan fast. This is a classic Egyptian drink made from dried apricot sheets (apricot leather) that are soaked, chilled and served. The high sugar content of the apricot leather makes this an excellent drink to end the Ramadan fast. I've already described the production of apricot leather on this site, so I will give a traditional recipe here
Break up the apricot leather into pieces, place in a bowl and add the warm water. Set aside for about 6 hours, stirring every hour or so, or until the fruit leather dissolves.
Place in the refrigerator for 1 hour to chill then serve in glasses, flavoured with the lime juice (if desired).
