For the Cheese Mix:
240g cream cheese
100g sugar
1 tsp vanilla extract
240g whipped cream, whipped
For the Sauce:
240ml cold milk
50g Vanilla Pudding Mix
100g sugar
480g cooked pumpkin, mashed
2 tsp cinnamon
120g whipped cream, whipped for topping
Chopped nuts and toasted pumpkin seeds to decorate.
Method:
Prepare the pizza as for the Sweet Pizza Crust recipe and bake in an oven pre-heated to 190°C for about 10 minutes, or until just golden at the edges. Allow to cool completely before topping.
For the sauce, whisk the pudding into the milk (the mixture should be quite thick) then stir-in the sugar and cinnamon. Cream together and refrigerate for at least 3 hours before use.
Add the cream cheese to a bowl and whip until light and fluffy then mix-in the sugar and vanilla before folding-in the whipped cream. Refrigerate until ready.
When everything is ready spread a layer of the cream cheese mix over the prepared pizza base then top with the pumpkin mixture. Finally, spread the remaining whipped cream over everything. If desired, top with nuts and pumpkin seeds.
