Ingredients:

1.5kg pumpkin flesh (actually kabocha squash)
120g flour
150g sugar
200ml coconut milk

Method:

Peel and cook the squash and drain in a colander overnight.

The next day mash the pumpkin, sift in the sugar and flour and add the coconut milk.

Mix everything together, put in a well-greased loaf or baking tin and bake in a moderately hot oven (180°C) for about 1 hour.

Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool further before slicing and serving.

This is typically served as an accompaniment.
