Proja (Corn Bread) is a traditional Serbian recipe for a classic loaf-shaped bread of ground maize, flour and eggs bound with milk and yoghurt and with baking powder as a leavening agent. The full recipe is presented here and I hope you enjoy this classic Serbian version of: Corn Bread (Proja).

Ingredients:
700g ground maize (corn)
420g plain flour
3 eggs
720ml oil
1 tsp baking powder
250ml yoghurt
250ml mineral water
1 large slice of cheese, crumbled
salt, to taste
Method:
Combine all the ingredients in a bowl and mix thoroughly to form a smooth batter. Turn into a loaf tin (at least 5cm high) that's been greased and lined with greaseproof (waxed) paper.
Place in an oven pre-heated to 180°C and bake for about 40 minutes, or until golden on top and cooked through (a skewer inserted in the centre of the loaf should emerge cleanly). Allow to cool in the tin then turn onto a lightly-floured work surface to cool completely. Serve sliced with buttermilk.
