Priddhas an' herrin' (Potatoes with Herring) is the traditional national dish of the Isle of Man. Basically it's a blend of sliced potatoes, onion and herring cooked in boiling water until done and served. Traditionally this would have been made with salt herring, and most families would have had a crock of these near the back door as a stand-by food. It used to be that the potatoes were sliced into rings and were boiled with the fish to cook. Today, the potatoes may well be cut into chunks and then finished by baking with the fish in an oven

Ingredients:

1.35kg (48 oz) potatoes
8 herring (fresh or salted)
4 onions

Method:

General: If the fish is salted, place in a large bowl and cover with plenty of fresh water then set aside to soak over night to remove the excess salt.

The traditional preparation method: Bring a pan of lightly-salted water to a boil, add the sliced potato and cook for about 5 minutes to par-boil. Add the herring and continue to boil for about 10 minutes until both the fish and the potatoes are cooked.

For the modern preparation method: Bring a pan of lightly-salted water to a boil, add the potato pieces and cook for about 10 minutes to par-boil. Drain the potatoes and transfer to a greased roasting tin. Sit the herring on top then transfer to an oven pre-heated to 180C and roast for 10 minutes, until the fish and potatoes are cooked.

To serve, place the potatoes on a warmed serving dish, sit the herring on top. Add thin slices of raw onion on top. Traditionally this was eaten with thick slices of bread and buttermilk to drink.

If desired you can add a splash of vinegar.
